Meredith Sarboraria 


Meredith is a Livermore Valley native and has been in the wine industry here since 1998 in capacities such as Tasting Room Pourer, Cellar Worker, Assistant Winemaker, and Winemaker.  She now works as a Consulting Winemaker, Professional Wine Judge, and teaches classes and leads private and corporate events based around winemaking and appreciation through her business, Barrel Down Wine Services. She has worked for wineries such as Wente, Fenestra, Stony Ridge/Crooked Vine, and currently Rodrigue Molyneaux. Her wines have won many awards at local and international competitions, and has received accolades and 90+ scores from Wine Enthusiast. Using her years of knowledge and love of wine, she has also become a Travel Advisor, specializing in wine cruises and vacations to Europe with itineraries based around local cuisine and beverage.

About The Tasting

Hola!  Kaixo!  I have just returned from a whirlwind trip to Central and Northern Spain, where I was studying the local wines and food of the region.  Now, I'd like to share what I discovered with you!


Although my husband and I visited Barcelona, Madrid, Rioja, and the Basque Country, our favorite areas for wine and food were Rioja and San Sebastian (otherwise known as Donostia by the local Basque people), so those are the regions I'd like to focus on in this seminar.  You will get to enjoy several delicious wines, such as Tempranillo and Garnacha-focused reds, Viura and Tempranillo Blanco-based whites, and the iconic txakolis ("cha-ko-lees") from the Basque region, to name a few.  You will also have the opportunity to pair these wines with a flight of pintxos ("peen-chos"), a sort of tapas enjoyed in the Basque region, to heighten the experience.  I will also be showing some photos from my trip, which will probably make you want to check out the areas yourself (and if so, consider talking to me about arranging your trip!). 


This tasting will fill up at 30 people.  All tickets are pre-sale only, no tickets will be sold at the door. Tickets must be purchased before June 28th. 

*Ticket fee includes a sparkling wine at reception and some fresh bread (regular & gluten-free) to cleanse your palate.  A flight of 4 pintxos is available to be added to your ticket purchase.  Please specify in the notes during checkout if you have any allergies or dietary restrictions.  Cut-off date for ordering food is June 27th.

Class Location

Although not affiliated with the tasting, Rosa Fierro Cellars & Favalora Vineyards have been kind enough to offer their lounge as a venue.  

The shared tasting room is located on Vasco Row in Livermore, and has been in town since 2014, when friends Rosie Fierro and Frank Favalora decided to go in together on a tasting room and cellar space.  Rosa Fierro Cellars is a 100% Hispanic & Woman-owned boutique winery specializing in white, red, and dessert wine made from quality vineyards around the Livermore Valley and Contra Costa County.  Rosie is also a talented photographer and you can find her photographs on all of her labels.  Favalora Vineyards is not only a winery, but also a vineyard in Costa Contra County.  Frank sources grapes from not only his own vineyard, but also renowned areas up and down California's Northen coast.  He produces not only favorites like Chardonnay and Zinfandel, but lesser-known wines like Carignane and Mataro.
